JOB OVERVIEW :

  • Overseas and manages all aspects of Kitchen operations of the Resort to maximize profitability and to ensure consistent superior food product quality and delivery to exceed guests’ expectations.
  • Adhere to local regulations concerning health, safety and other compliance requirements, as well as company brand standards, local policies and procedures.DUTY AND RESPONSIBILITIES :
  • Successfully manages all functions of Food Production and Stewarding operations to achieve optimum departmental profit.
  • Develops with the Director of Food and Beverage popular menus offering guests value for money in accordance with IHG guidelines.
  • Oversees special events and special food promotions.
  • Responsible in keeping property safe and secure and participate in any hotel activity related to Fire Life and Safety.
  • Keep posted on latest worldwide culinary trends
  • Ensure that outstanding culinary technical skills are maintained.
  • Maintains comprehensive culinary knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
  • Develops with Training Manager, training plans, training material in accordance with IHG guidelines and implements training plans for Food Production employees.
  • Monitors local competitors and compare operations with the Resort’s Food and Beverage operation
  • Determines with the Finance Director the minimum and maximum stocks of all food, material and equipment.
  • Works with Human Resources on manpower planning and management needs.
  • Works with Director of Finance in the preparation and management of the Department’s budget.

    Required Skills : Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company.

    A high energy level and a passion for achieving and delivering superior results Strong Leadership skills in motivating and managing teams to drive for results Problem solving, reasoning, organizational and training abilities Alcohol awareness certification and / or food service permit or valid health / food handler card as required by local government agency Ability to communicate well in English Proficient in the use of Microsoft Office Good writing skillsQualifications : Degree or Vocational Certificate in Culinary Skills or related field.

    Experience : Minimum 3 years’ experience as Executive Chef in large luxury hotels / resorts of international standard with numerous F&B outlets South East Asia or / and Middle East experience highly desirable Proven track record of employment
