The Commis is responsible for producing consistently high quality products at the assigned station. The individual assists the Chef de Partie in preparation of dishes, maintaining an efficient and flexible service that is consistent with the departmental operating policies and procedures to maximize guest satisfaction.


  • Ensures and provides flawless, upscale, professional and high-class guest service experiences as a role model and expertise in all kitchen related matters.
  • Be an exemplary role model in inspiriting team members through strong demonstration of the Capella Culture and Service Philosophy.
  • Assists the Chef de Partie in running of the assigned work station.
  • Provide the highest level of guest comfort and ensures the delivery of the Capella brand, values and vision, to create an amazing experience for our guests and team members.
  • Assists the chefs in mis-en-place preparation, ensuring that only fresh ingredients of the highest quality is used.
  • Prepares all guest orders, noting special dietary preferences in accordance with production requirements and quality standards while maintaining a safe and sanitary work environment.
  • Perform opening and closing duties as assigned by supervisors and handle all HACCP forms on a daily basis.
  • Maintain proper security and storage of inventory supplies in a timely manner to minimise wastage and pilferage.
  • Ensures that the assigned working areas, kitchen equipment and tools are kept clean and organised at all time.
  • Coordinates with the Executive Chef during the annual developments of budget, CAPEX and man power planning.
  • Ensures accurate maintenance of recipes, conversion recipes and product specifications.
  • Ensures that the daily order list will be on time, purchased the best possible food and prepared according to the needs of the individual Kitchen.
  • Adhere to the Health, Hygiene and Safety guidelines and operating procedures set by the hotel.
  • Attends and proactively contribute to all staff meetings Departmental and Hotel trainings scheduled and other related activities.
  • Report any issue or damages and breakdowns within working areas and the hotel to ensure a defect-free facilities and service amenities provided.
  • Recognises the importance of LQA and Forbes standards as to deliver excellent audit and service performance.
  • Maintains strong working relationships with other departments to ensure effective communications for operational issues, serves as a role model for inter-departmental collaboration and support
  • Protect the privacy and security of guests and coworkers.
